The Fort Collins Brewery made its debut in 2003 as a German lager house. In its early days FCB concentrated on just three brews, Edgar, Doktor and Z Lagers, all have since been retired. One year later, in 2004, the Peters family swept FCB off its feet and proceeded to shake things up a bit. They gave FCB’s brewers the freedom to experiment with all varieties of yeast and recipes from around the world while still keeping the emphasis on creating superbly balanced, distinctive and drinkable lagers and ales.
Since then, the brewery has added five new full time brews and sports an ingenious line up of seasonal and special release brews. These new products proved to be exactly what FCB needed to expand distribution locally, to several other states and even into Sweden.
By 2007, packaging had become a time consuming endeavor and the limiting factor for production. It was time to bid farewell to our 6 head manual Meheen filler, we needed an upgrade. So, in the spring of 2007 we received our brand new SBC bottling line from Europe. This automated system gives us the capacity to package 120 bottles/ minute, renewed confidence in our shelf life and will serve us well into the future.
We didn’t sit still for long and in 2010 we moved into our new home, a brand new 30,000 square foot facility on the corner of Lincoln and Lemay; completing the Fort Collins Brewery Triangle. In May of 2011, Gravity 1020 Modern Tavern opened its doors offering Fort Collins residents and tourists an atmosphere of artisanal food and beer inside a full production brewery.
2013 was a banner year for us, we expanded our entire brewhouse. Swapping out our 20bbl. Newlands brew haus for a shinny new 50bbl. Rolec fully-automated German brew haus, which allowed us to increase quality, consistency and production of our full time and seasonal beers. A new 7bbl. Newlands Pilot Brew Haus was added in November, with a focus on expanding creativity for our Tap Club Series and collaboration brews. In another step to increase the quality of our beer, we exchanged our DE filtering process with a GEA Westfalia centrifuge for superior beer clarification. Finally, just before the new year a Wittemann Pinpoint Carbonator was placed into production. Whew….what a year.
Our ever-evolving profile of distinctive, hand-crafted Colorado brews can now be enjoyed by all. Hard work, a love of the craft and a passion for exceptional beer, food and people is what the Fort Collins Brewery/Gravity 1020 is all about.
Cheers – The Peters Family
