Wide range of food: meat pie, English cheese; great with a burger!
RECIPE: ROASTED TOMATO CHIPOTLE SOUP
Ingredients 2 lbs Plum, or Roma tomatoes(fresh, cored) 1/2 white onion, peeled and quartered 3 garlic cloves 1 red bell pepper, seeded and cut in half 1 chipotle pepper in adobo, rough chopped 1/2 bottle 1020 Pale Ale, reduced by 1/2 in med pot 1/2 C. stock (chicken or vegetable) olive oil salt chopped fresh cilantro and sour cream for garnish
Directions Coat tomatoes, onions, garlic, and bell peppers in olive oil, place on baking sheet. Bake @ 400F for 45 minutes. Let cool for 10 minutes. Peel skin off tomatoes and peppers. In food processor, puree vegetables, chipotle pepper, and pan scrapings until desired consistency. Add mixture to beer reduction and stock. Bring to a simmer and serve with cilantro and sour cream garnish and with your favorite Grilled Cheese.
