RECIPE: CHOCOLATE STOUT MUSHROOM GRAVY
Ingredients 12 oz white mushrooms sliced thin 12 oz porcini or other wild mushrooms sliced thin 2 shallots minced 4 oz butter 6 oz flour 5 oz chocolate stout 28 oz stock (vegetable, chicken or beef) 10 oz Heavy Cream Salt and Pepper to Taste
Directions Caramelize mushrooms in a hot wide pan with butter. Add shallots and cook until tender. Add flour to make roux, and cook roux until a light brown color appears. Do this over medium heat and stir constantly for about 5 minutes. Deglaze with Chocolate Stout, then add stock and bring up to a boil to thicken. Once thickened, remove from heat and add cream. Season with Salt and Pepper.
